Wicklow Wolf Brewery – IPA and Elevation Pale Ale
This week I would like to recommend two beers from the Wicklow Wolf Brewery.
Wicklow Wolf was founded in 2014 by Quincey Fennelly and Simon Lynch.
Simon is the hop man and grows the hops on his farm in Roundwood. Quincey started brewing at home and got so good at it there was only one thing left to do, set up a brewery. So off they went and set up a brewery in Bray. The final touch was to bring in Peter Reynier a brewer from Colorado on board and The Wolf was loose.
Wicklow Wolf IPA – This is a big hoppy beer. It’s a blend of Cascade and Simcoe hops which deliver lot of flavour. Notes of Grapefruit, passion fruit and some citrus flavours for good measure. This is a really tasty IPA and with an abv of 6.3% it packs a punch too.
Wicklow Wolf Elevation Pale Ale – This beer has a softer hop character compared to the IPA. Mosaic hops along with Munich are used to produce this bevvy. It has a nice juicy berry character to it and the Munich malts give it that slight malt kick.
